I LOVE TURKEY!

 
So every year I struggle to recreste the most delicious turkey I ever made.  It was actually the first turkey I ever made, many years ago when we lived in Vegas and this year I was determined to finally get it right! So I injected with butter, put two apples and an onion in the cavity, poured more melted butter over the ird and seasoned with garlic salt, pepper and a mixture of dried italian herbs.  I then placed it on a v shaped rack in a shallow roasting pan and loosely covered with foil.  I roasted it at 325 for 3 hours and 45 minnutes, then removed the foil, drizzled with oil to crisp the skin and let is cook uncovered for another 30 minutes. I let it rest for 15 minutes and VOILA....

FINALLY...a moist, flavoful turkey that im already getting hungry for seconds!

I was going to make a ton of sides and realized that I always have too much food and am stressed out the whole time.  So I went with the basics and this has been my most calm and easy Thanksgiving meal EVER.  I even had MOST of the dished washed and put away before we even ate:-P  I didn't miss any of the other dishes and im full but not sick...and as soon as this post is done I will be ready to dive into the pumpkin cheesecake and enjoy it becuase I've owrked up an appetite from finishing the dishes. Oh and I have to give a shout out to Lee...who refused to let me take a picture of him carving the turkey.  He carved it so nicely and even butchered the leftovers, put them in ziplocs, took out the trash and helped clean the kitchen. 

It was a peaceful and relaxing day and I am very thankful it was...the beginning of the day I was a little sad because I really miss my family.  The last thanksgivning I had with my family was before we got married and it is long oversdue.  Im hoping I can convince everyone to save up some money and plan to meet in Utah or in Hawaii next Christmas to spend the holidays together and even maybe have a Christmas wedding...hmmm that sounds like a plan;-)

It's ironic that you are in Hawaii and everyone else is in the States! Doesn't your one brother live there still? The one with the one daughter you love?
